If the plums were harvested being not ripe enough, you can store them in a normal temperature until the time they reach their optimal condition and then place them in a cold store. It is worth mentioning that some variations do not lose their freshness even after the lapse of four weeks after their collection, as e.g. in Bellamira plums.
